Ingredients
- 150g unsalted butter (at room temperature)
- 200g self raising flour
- 4 eggs
- 6 tbsp whole milk
- 1 tsp baking powder
- 1 small sweet potato
- 1 large carrot
- 1 apple
- 4 tbsp frozen sweetcorn
- 1.5 tsp ground cinnamon
Method
- Line muffin tins with cases.
- Cream the butter with an electric mixer.
- Add the baking powder along with 1 egg, 1-2 tbsp milk and some flour and throughly whisk.
- Repeat step 3 with each egg, until all the eggs, butter and milk have been added.
- Peel the sweet potato, carrot and apple, then grate into the mixture.
- Add the cinnamon and sweetcorn and whisk until properly combined.
- Spoon into the cases and bake in a preheated oven at 180C for 20-25 minutes until cooked and golden brown.
- Serve as is or spread with soft cheese.
